Austenitizing

Heating a steel above the critical transformation temperature limit to achieve complete dissolution of the microstructure into the face-centered γ-phase.

Austenitizing simply means heating the steel high enough so its structure fully transforms. You do this before you want to harden. If you don't hit the temperature or don't hold it long enough, the structure won't be uniform – and the part will harden unevenly or crack on you. Give it enough time at temperature so it's transformed all the way through, and don't let it cool too fast before you continue.
